I’ve scoured an old Tumblr blog today looking for my easy-peasy fail-proof vegan pancake recipe to share today on the flippin’ best Tuesday of the year! These make proper crepe style pancakes – if there is any contention as to what pancakes are appropriate on this particular day, you should probably vex elsewhere as I’m a total pancake purist! Here’s the recipe:
You will need:
½ cup soya milk (I used sweetened for my dessert pancakes)
2/3 cup water
¼ cup melted Pure spread
1 cup all purpose flour (I just used the own brand organic plain)
¼ tsp salt
1 tbs Sugar
2 tsp vanilla extract (and then I used almond when I ran out)
(sorry for the American measures, I have these at home but if you haven’t then please look for the measurement conversions online or gauge the equivalent scale measures with a small mug)
Put everything I just mentioned into a bowl and whisk. I used a hand blender and it took seconds!
Stick a pan on to heat up, and after five mins or so use a small knob of Pure spread to grease it up. Then slowly pour the batter, turning the pan as to allow it to spread.
Adorn with whatever toppings you can get away with… as I previously mentioned, as a pancake purist I’ll likely stick to lemon and sugar.
Welcome to 2018 and for many doing Veganuary, welcome to veganism! This year marks a new era of blogging from us over at Vegan Southampton. When I say ‘us’ I’m typically referring to myself and the assemblage of friends and supporters who regularly contribute to our community.

I had just moved back to my home town following a 6 year stint in Bournemouth and Bristol, and was in need of a tour guide. For whatever reason you are vegan or thinking about going vegan – in 2018 you can’t go wrong. According to a whole bunch of stats I found online (and a well-timed post on my friend’s website Live Kindly) veganism is undoubtedly on the grow. It is estimated that the UK population is currently made up of vegans by 2%. This seems small but equates to 542,000 individuals at the last official estimation, which happened over 1.5 years ago and has since grown exponentially! Even a quick Google search yields promising top results.
For me personally, I am entering my eighth year of veganism (I’m still alive! Goodness knows how without any protein…!?) and have always been in it for ethical reasons. So this year to coincide with other people’s Veganuary efforts, I’m attempting a healthy diet kick. I have always considered my diet to be healthier than others, but weighing in at 11.5 stone, and feeling increasingly like I’m pushing 40 years old when the reality is 30, I certainly am not eating the best of what the vegan diet has to offer. To kick me off, I’m trialing the Free Soul diet supplement for women.

Alongside a daily shake and the incorporation of some balanced dinners and gym time, I am going to be doing a dry January. To accompany my excessive diet, I also do enjoy a drink, so a welcome break is just what the doctor prescribed.
